1 cup canned pumpkin puree

1/2 cup vegetable oil

1/2 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ground ginger

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, brown sugar, and granulated sugar until smooth.

      Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

          Gradually incorporate the dry ingredients into the pumpkin mixture, stirring just until combined.

            Gently fold in the chocolate chips and chopped walnuts, if using.

              Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.

                  Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
