2 cups white cheese (queso blanco or a mix of mozzarella and Monterey Jack)

1 cup whole milk

1 tablespoon butter

1 tablespoon all-purpose flour

1 medium onion, finely chopped

1 jalapeño, seeds removed and minced

1 small tomato, diced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional: 1/2 teaspoon cumin for extra flavor

Instructions
 

Melt the Butter: In a medium saucepan over medium heat, melt the butter.

    Make the Roux: Add the flour to the melted butter, stirring constantly for 1-2 minutes until the mixture is lightly golden.

      Sauté Vegetables: Add the chopped onion and jalapeño to the pan, cooking for 3-4 minutes until softened and fragrant.

        Add Milk: Slowly whisk in the whole milk, ensuring there are no lumps. Continue to cook until the mixture thickens slightly, about 5-7 minutes.

          Incorporate the Cheese: Reduce heat to low, and add the white cheese gradually, stirring constantly until melted and smooth.

            Mix in Tomato and Cilantro: Stir in the diced tomato, chopped cilantro, and cumin (if using). Season with salt and pepper to taste.

              Serve Warm: Transfer the queso blanco to a serving dish and enjoy with tortilla chips, vegetables, or use as a topping for tacos and nachos.
