400g fresh mushrooms, sliced (shiitake, cremini, or a mix)

1 medium onion, chopped

2 cloves garlic, minced

3 cups vegetable broth

1 tablespoon olive oil

1 teaspoon thyme (dried or fresh)

1/2 teaspoon paprika

1 cup coconut milk (canned or carton)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Once hot, add the chopped onions and sauté until they're translucent, about 5 minutes.

    Add the minced garlic and sauté for another 1-2 minutes, being careful not to let it burn.

      Add the sliced mushrooms to the pot. Cook for about 7-10 minutes, stirring occasionally, until the mushrooms are softened and browned.

        Sprinkle in the thyme and paprika, and stir to combine with the mushrooms.

          Pour in the vegetable broth, season with salt and pepper, and bring to a simmer. Allow to simmer for about 10 minutes for the flavors to meld.

            Using an immersion blender, blend the soup until it reaches a creamy consistency. If you prefer a chunkier soup, blend only half of it.

              Stir in the coconut milk and heat the soup gently for another 2-3 minutes. Adjust seasoning as needed.

                Remove from heat and let it cool slightly before serving.
