2 packs of instant ramen noodles (discard the seasoning packets)

1 tablespoon sesame oil

1 medium carrot, julienned

1 bell pepper (red or yellow), sliced

1 small zucchini, sliced into half-moons

1 cup broccoli florets

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce (or vegetarian alternative)

1 teaspoon chili paste (adjust for spice preference)

1 tablespoon toasted sesame seeds (for garnish)

Fresh cilantro or basil leaves (for garnish, optional)

Instructions
 

Cook the Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to package instructions (usually about 3-4 minutes). Drain and set aside.

    Prep the Vegetables: While the noodles are cooking, prepare all your vegetables—julienne the carrot, slice the bell pepper and zucchini, and chop the broccoli into florets.

      Heat the Wok: In a large skillet or wok, heat the sesame oil over medium-high heat.

        Sauté Aromatics: Add the minced garlic and ginger to the hot oil. Sauté for about 30 seconds, until fragrant.

          Stir-Fry the Veggies: Add the carrot, bell pepper, zucchini, and broccoli to the pan. Stir-fry for about 3-4 minutes until they start to soften but remain crisp.

            Combine with Noodles: Add the cooked ramen noodles to the skillet with the vegetables.

              Season the Stir Fry: Pour in the soy sauce, oyster sauce, and chili paste. Toss everything together gently to coat the noodles and vegetables evenly, cooking for an additional 2-3 minutes to heat through.

                Finish & Serve: Remove from heat and stir in green onions. Garnish with toasted sesame seeds, and optional cilantro or basil leaves.
