4 cups red cabbage, finely shredded

1 cup carrots, grated

1/2 cup red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1/4 cup apple cider vinegar

2 tablespoons honey or agave syrup

1 tablespoon Dijon mustard

1 teaspoon cumin

Salt and pepper to taste

1 avocado, sliced (for garnish)

Instructions
 

In a large mixing bowl, combine the shredded red cabbage, grated carrots, sliced red bell pepper, green onions, and fresh cilantro. Toss them together gently to mix.

    In a separate small bowl, whisk together the apple cider vinegar, honey (or agave), Dijon mustard, cumin, salt, and pepper until well blended and smooth.

      Pour the dressing over the cabbage mixture and toss thoroughly until all the vegetables are evenly coated.

        Allow the slaw to sit for at least 15-20 minutes to let the flavors meld together and for the cabbage to soften slightly.

          Before serving, give the slaw another quick toss, taste, and adjust seasoning if necessary.
