Roast Tomato & Whipped Ricotta Toasts

2 cups cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon balsamic vinegar

1 cup ricotta cheese

Zest of 1 lemon

1 tablespoon honey

4 slices of rustic bread (like ciabatta or sourdough)

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    On a baking sheet, spread the halved cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.

      Roast the tomatoes for about 20-25 minutes, or until they are blistered and caramelized. Drizzle with balsamic vinegar before removing from the oven.

        While the tomatoes are roasting, prepare the whipped ricotta. In a mixing bowl, combine ricotta cheese, lemon zest, honey, salt, and pepper. Using a hand mixer or a whisk, whip until smooth and creamy.

          Toast the slices of bread until they are golden and crispy.

            To assemble the toasts, spread a generous layer of whipped ricotta on each slice of toasted bread. Top with the roasted cherry tomatoes.

              Garnish with fresh basil leaves for a fragrant finish.
