1 pound medium-sized carrots, peeled and cut into sticks

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon fresh ginger, grated

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the olive oil, honey, grated ginger, garlic powder, cumin, salt, and pepper. Mix well to create a marinade.

      Add the carrot sticks to the bowl and toss them in the marinade until they are evenly coated.

        Line a baking sheet with parchment paper and spread the carrots out in a single layer to ensure they roast evenly.

          Roast the carrots in the preheated oven for 25-30 minutes, or until they are caramelized and tender, stirring halfway through to promote even cooking.

            Once done, remove the carrots from the oven and sprinkle them with lemon zest and chopped parsley for a fresh finish.

              Allow the carrots to cool for a couple of minutes before serving.
