8 cloves of garlic

4 tablespoons olive oil

8 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 tablespoons butter, softened

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the tops off the garlic cloves to expose the tops. Place the cloves on a piece of aluminum foil, drizzle with 2 tablespoons of olive oil, and sprinkle with a pinch of salt. Wrap the foil tightly and roast in the oven for about 30 minutes, or until the cloves are soft and caramelized. Once roasted, let them cool slightly, then squeeze the softened garlic out of the skins and mash with a fork.

    Prepare the Bread: While the garlic is roasting, lay out the slices of sourdough on a clean surface. Spread a thin layer of the remaining olive oil on one side of each slice.

      Assemble the Grilled Cheese: Flip the bread slices over (the oiled side should be down). Spread a generous layer of the roasted garlic mash on the un-oiled side of four slices. Sprinkle a mix of the cheddar and mozzarella cheese over the roasted garlic. Top with the remaining bread slices, oiled side facing out.

        Cook the Sandwiches: In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add the assembled sandwiches to the skillet. Cook for about 4-5 minutes, or until the bottom side is golden and crispy. Carefully flip the sandwiches and add the remaining 2 tablespoons of butter to the skillet. Cook for another 4-5 minutes until the other side is golden and the cheese is fully melted.

          Serve: Remove the sandwiches from the skillet and let them rest for a minute. Slice in half and garnish with fresh basil leaves if desired. Season with salt and pepper to taste.
