1 cup fresh strawberries, hulled and halved

1 tablespoon honey

1 teaspoon balsamic vinegar

1 cup ricotta cheese

2 tablespoons powdered sugar

1 teaspoon vanilla extract

4 slices of rustic bread (such as sourdough or ciabatta)

2 tablespoons olive oil

Sea salt to taste

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a mixing bowl, combine the halved strawberries, honey, and balsamic vinegar. Toss until the strawberries are well coated.

      Spread the strawberries out on a parchment-lined baking sheet and roast in the preheated oven for about 15-20 minutes, until they are soft and slightly caramelized. Remove from oven and let cool slightly.

        While the strawberries are cooling, prepare the whipped ricotta. In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Use a hand mixer or a fork to whip the mixture until it becomes airy and creamy. Adjust sweetness to your taste.

          Heat a grill pan or regular skillet over medium heat. Brush each slice of bread with olive oil on both sides. Toast the bread in the skillet until golden brown, about 3-4 minutes per side.

            To assemble, spread a generous amount of whipped ricotta over each slice of toasted bread. Top with the roasted strawberries and drizzle with any remaining juice from the baking sheet.

              Finish with a pinch of sea salt on top and garnish with fresh mint leaves if desired.
