2 lbs pork loin

2 tablespoons fresh rosemary, chopped

4 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

2 large apples, peeled, cored, and diced (preferably Fuji or Honeycrisp)

1/4 cup pure maple syrup

1/2 teaspoon ground cinnamon

1 tablespoon lemon juice

1/4 cup diced onion

Preheat your oven to 375°F (190°C).

    In a small bowl, mix together the chopped rosemary, minced garlic, olive oil, salt, and pepper to create a marinade.

      Rub the marinade all over the pork loin, ensuring it covers all sides.

        Place the marinated pork loin in a roasting pan. Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 145°F (63°C). For added flavor, baste the pork with its juices halfway through cooking.

          While the pork is roasting, prepare the maple apple sauce. In a medium saucepan over medium heat, combine the diced apples, onion, maple syrup, cinnamon, and lemon juice.

            Cook the apple mixture, stirring occasionally, for about 10-12 minutes, or until the apples are soft and the sauce has thickened slightly.

              Once the pork is done, remove it from the oven and let it rest for 10 minutes before slicing. This will help retain its juices.

                Serve the sliced pork with a generous spoonful of maple apple sauce on top or on the side.
