1 can (10 oz) Rotel diced tomatoes and green chilies, undrained

1 lb Velveeta cheese, cubed

1 cup shredded pepper jack cheese

1/2 lb ground beef or turkey, cooked and drained

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1 tablespoon fresh cilantro, chopped (optional for garnish)

Tortilla chips for serving

Instructions
 

In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat and set aside.

    In a large pot or slow cooker, combine the cooked meat, undrained can of Rotel, cubed Velveeta cheese, shredded pepper jack cheese, cream cheese, garlic powder, onion powder, and cumin.

      Heat over medium heat (or set the slow cooker to low) stirring occasionally until the cheeses are melted and all ingredients are well combined, about 10-15 minutes on the stovetop or 30-45 minutes in the slow cooker.

        Taste the dip and adjust seasonings if necessary. Stir in half of the fresh cilantro if using for added flavor.

          Once creamy and thoroughly mixed, remove from heat. Afterward, it can be transferred to a serving dish or kept warm in the slow cooker.

            Serve with tortilla chips and garnish with the remaining cilantro on top if desired.
