Ingredients

2 salmon fillets (about 6 oz each)

8 oz shrimp, peeled and deveined

2 cups fresh broccoli florets

1 cup sweet corn (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley for garnish

Instructions

Prep the Ingredients: Start by rinsing the salmon and shrimp under cold water. Pat them dry with paper towels. Season the salmon fillets and shrimp with smoked paprika, salt, and pepper.

Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Cook Salmon and Shrimp: Push the garlic to the side of the skillet and add the salmon fillets skin-side down. Cook for about 4-5 minutes per side until cooked through. In the last 2 minutes, add the shrimp to the skillet, cooking until they turn pink.

Steam Broccoli: While the salmon and shrimp are cooking, place broccoli florets in a microwave-safe bowl with a bit of water. Cover and microwave on high for 2-3 minutes until bright green and tender-crisp.

Make Cheesy Mixture: In a small bowl, mix together the softened cream cheese, cheddar cheese, and lemon juice until well combined. Add sweet corn to the mixture.

Combine Everything: Once the salmon and shrimp are cooked, gently fold in the steamed broccoli and the cheesy corn mixture into the skillet. Allow to cook over low heat for another 2-3 minutes until the cheese is melted and creamy.

Serve: Plate a salmon fillet with shrimp and cheesy broccoli-corn mixture artfully arranged on the side. Garnish with freshly chopped parsley for a pop of color.
