9 lasagna noodles

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups spinach, chopped (fresh or frozen)

1 pound ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

2 cups marinara sauce

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon oregano

Salt and pepper to taste

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent (about 3-4 minutes).

        Add ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked through. Drain excess fat, if necessary.

          Stir in marinara sauce, dried basil, oregano, salt, and pepper into the skillet. Let the mixture simmer for 5 minutes.

            In a separate bowl, mix ricotta cheese, half of the mozzarella, chopped spinach, and a pinch of salt and pepper until well combined.

              In a baking dish, spread a thin layer of the meat sauce on the bottom to prevent sticking. Place 3 noodles over the sauce.

                Spread half of the ricotta mixture over the noodles, followed by a third of the meat sauce.

                  Repeat this layering process: noodles, ricotta mixture, meat sauce until all ingredients are used, finishing with noodles topped with the remaining meat sauce.

                    Sprinkle the remaining mozzarella and all of the Parmesan cheese on top for a golden crust.

                      Cover the dish with aluminum foil (to prevent sticking, spray foil with non-stick spray) and bake for 25 minutes. Remove foil and bake for an additional 15 minutes, or until cheese is bubbly and golden.

                        Let lasagna cool for about 10 minutes before slicing for serving.
