Saucy Hungarian Red Potato Goulash

1.5 lbs red potatoes, peeled and cubed

1 lb beef chuck, cut into bite-sized pieces

1 large onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons sweet Hungarian paprika

1 teaspoon caraway seeds

4 cups beef broth

1 tablespoon tomato paste

1 tablespoon olive oil

1 bay leaf

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the chopped onion and cook until it becomes soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Increase the heat to medium-high and add the beef pieces. Sear the meat until browned on all sides, approximately 6-8 minutes.

        Sprinkle the sweet Hungarian paprika and caraway seeds over the beef, mixing well to coat the meat evenly with the spices.

          Add the diced red bell pepper and tomato paste, stirring to combine and cooking for an additional 2-3 minutes.

            Pour in the beef broth and drop in the bay leaf. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for 1 hour.

              After 1 hour, add the cubed red potatoes to the pot. Stir gently to combine, cover, and continue to simmer for another 30-40 minutes, or until the potatoes are tender and the beef is fork-tender.

                Once cooked, remove the bay leaf and season the goulash with salt and pepper to taste.

                  Serve hot, garnished with freshly chopped parsley for a burst of color and flavor.
