Ingredients

1 package of breakfast sausage links (about 12 links)

6 large eggs

1 cup shredded cheddar cheese

1/4 cup milk

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon butter

4 large flour tortillas

Fresh chives for garnish (optional)

Instructions

Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage links. Cook until browned and cooked through, about 8-10 minutes. Remove from skillet and let cool slightly. Slice each link in half lengthwise.

Whisk the Eggs: In a medium bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.

Scramble the Eggs: In the same skillet with the drippings from the sausages (or add a tablespoon of butter if needed), pour in the egg mixture. Cook over medium-low heat, stirring gently until the eggs are just set and still fluffy, about 4-5 minutes. Remove from heat and stir in the shredded cheddar cheese until melted.

Assemble the Roll-Ups: Lay out a flour tortilla on a clean surface. Place 2-3 halves of sausage links on the bottom half of the tortilla, followed by a scoop of scrambled eggs and cheese. Roll the tortilla up tightly, starting from the bottom, to encase the filling.

Toast the Roll-Ups: In the same skillet, add the roll-ups seam side down. Cook for about 2-3 minutes on each side, until golden brown and crispy.

Serve: Remove the roll-ups from the skillet. Allow to cool briefly before cutting in half. Garnish with fresh chives if desired.
