1 pound Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 bell pepper (red or yellow), diced

1 can (14.5 oz) diced tomatoes, with juices

4 cups chicken broth

1 can (15 oz) cannellini beans, rinsed and drained

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust for spice)

Salt and black pepper to taste

2 cups fresh spinach or kale, roughly chopped

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the diced onion and sauté for about 5 minutes until softened.

      Stir in the minced garlic and cook for an additional minute, until fragrant.

        Add the sausage to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 7-8 minutes.

          Incorporate the diced carrots, celery, and bell pepper. Sauté for another 5 minutes, stirring occasionally.

            Add the diced tomatoes (with their juices) and the chicken broth. Stir to combine.

              Season with smoked paprika, oregano, red pepper flakes, salt, and pepper. Bring the mixture to a boil, then reduce heat to a simmer.

                Let the soup cook uncovered for 20 minutes, allowing the vegetables to fully soften and flavors to meld.

                  Stir in the cannellini beans and chopped spinach (or kale) and let simmer for an additional 5 minutes, until the greens are wilted.

                    Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
