2 large onions, thinly sliced

1 cup dark beer (non-alcoholic beer can be used)

4 ounces salted pork or pancetta, diced

2 tablespoons olive oil

1 tablespoon brown sugar

2 tablespoons apple cider vinegar

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced salted pork and cook until crispy, about 5-7 minutes. Remove the pork from the skillet and set it aside on a paper towel to drain.

    In the same skillet, using the rendered fat, add the sliced onions and brown sugar. Sauté the onions for about 10 minutes, until they begin to caramelize and turn golden brown.

      Pour the beer into the skillet, stirring to deglaze the pan and scrape any browned bits off the bottom. Let the mixture simmer for about 5 minutes until it reduces slightly.

        Add apple cider vinegar, dried thyme, salt, and pepper to the skillet. Stir well and cook for an additional 5 minutes, allowing the flavors to meld together.

          Mix the crispy salted pork back into the onion mixture and toss everything together. Cook for another 2-3 minutes until heated through.

            Remove from heat and adjust seasoning if needed.
