Ingredients

8 oz fettuccine or your favorite pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach (or 2 cups frozen spinach, thawed)

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon nutmeg

Salt and pepper to taste

1/4 cup toasted pine nuts (for garnish)

Fresh basil leaves (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.

Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Spinach: If using fresh spinach, add it to the skillet and cook until wilted, about 3-4 minutes. If using frozen spinach, add it to the skillet and cook until heated through. Stir well to combine with the garlic.

Create the Cream Sauce: Reduce the heat to low, pour in the heavy cream, and stir to coat the spinach. Allow it to simmer gently for about 3 minutes.

Incorporate Cheese and Seasoning: Gradually whisk in the grated Parmesan cheese, nutmeg, salt, and pepper. If the sauce is too thick, add reserved pasta water a tablespoon at a time until a creamy consistency is achieved.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the creamy spinach sauce. Cook for another 2-3 minutes to warm through.

Serve: Plate the pasta in bowls and garnish with toasted pine nuts and fresh basil leaves.

                Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Serve the pasta in shallow bowls. Drizzle with a little extra olive oil, sprinkle additional Parmesan cheese on top, and add a lemon wedge on the side for a fresh touch.
