1 can (15 oz) mixed beans (e.g. kidney, chickpeas, black beans), drained and rinsed

1 tablespoon olive oil

1 medium onion, diced

3 garlic cloves, minced

2 carrots, diced

1 celery stalk, diced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes

4 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 cups fresh spinach or kale, roughly chopped

Juice of 1 lemon

Fresh parsley, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Stir in the minced garlic, diced carrots, celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally, until the vegetables start to soften.

      Add the mixed beans, diced tomatoes (with juices), vegetable broth, oregano, cumin, smoked paprika, salt, and pepper. Bring the soup to a boil, then reduce the heat to simmer.

        Cover and let the soup cook for about 20-25 minutes, allowing the flavors to meld together.

          Stir in the chopped spinach or kale and cook for an additional 5-7 minutes until the greens are wilted.

            Just before serving, add lemon juice to brighten the flavors and adjust seasoning with salt and pepper as needed.

              Serve hot, garnished with fresh parsley.
