4 pieces of soft baguette or crusty bread

4 large eggs

200g minced chicken or beef

1 small onion, finely chopped

2 cloves garlic, minced

1 green bell pepper, finely chopped

1 teaspoon curry powder

1 teaspoon salt

1 tablespoon soy sauce

2 tablespoons mayonnaise (optional)

1 tablespoon chili sauce (adjust to taste)

Fresh coriander leaves for garnish

Instructions
 

In a medium skillet over medium heat, add a drizzle of oil and sauté the chopped onion, minced garlic, and green bell pepper until they are softened (about 3-4 minutes).

    Add the minced chicken or beef to the skillet, stirring until browned and cooked through, about 5-7 minutes.

      Season the mixture with salt, curry powder, and soy sauce, mixing everything well. Remove from heat and set aside.

        In a separate bowl, beat the eggs until well combined.

          Cut the baguette in half lengthwise, creating a pocket for the filling.

            Heat a clean skillet over low heat, and place the cut-side of the baguette down onto the skillet. Gently toast until golden brown (about 2-3 minutes).

              Carefully flip the baguette over, and pour a portion of the beaten eggs into each side, letting it cook slightly before adding a portion of the meat mixture on top.

                After about a minute, gently fold the baguette closed, pressing lightly to ensure everything adheres. Cook for another 1-2 minutes or until the egg is fully set and the inside is warm.

                  Remove from heat and slice the Roti John in half. Spread mayonnaise and chili sauce inside if desired, then garnish with fresh coriander leaves.
