4 large russet potatoes

1 lb ground beef or turkey

1 small onion, finely chopped

1 red bell pepper, diced

1 cup tomato sauce

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub and pierce the potatoes with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender.

      In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, breaking it apart as it cooks. Drain any excess fat.

        Add the chopped onion and diced bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are soft.

          Stir in the tomato sauce, ketchup, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Let the mixture simmer for about 10 minutes, stirring occasionally.

            Once the potatoes are done, carefully slice them open, fluff the insides with a fork, and season with a little salt and pepper.

              Spoon the Sloppy Joe mixture generously over the fluffed potato insides.

                Sprinkle the shredded cheddar cheese on top of the mixture and place the loaded potatoes back in the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let cool for a minute before garnishing with fresh chopped parsley.
