4 boneless, skinless chicken breasts

1 cup chicken broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 packet taco seasoning (or homemade)

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Tortillas (soft or hard shell, your choice)

Toppings: avocado, diced tomatoes, shredded lettuce, sour cream, cheese, cilantro, lime wedges

Instructions
 

Sear the Chicken: Heat the olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear on both sides for 3-4 minutes until golden brown. Transfer to the slow cooker.
