4 cups potatoes, peeled and diced

1 large onion, chopped

2 cloves garlic, minced

3 carrots, sliced

2 celery stalks, diced

6 cups vegetable broth

1 lb smoked sausage (such as kielbasa), sliced

1 teaspoon dried thyme

1 teaspoon paprika

1 bay leaf

Salt and pepper to taste

1 cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions
 

In a slow cooker, add the diced potatoes, chopped onion, minced garlic, sliced carrots, and diced celery.

    Pour in the vegetable broth, then add the sliced smoked sausage on top.

      Stir in the dried thyme, paprika, bay leaf, salt, and pepper.

        Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender.

          Once cooked, remove the bay leaf and use a potato masher to slightly mash some of the potatoes in the soup, creating a creamy texture while still leaving some chunks.

            Stir in the heavy cream and let the soup cook for an additional 15 minutes on low.

              Taste and adjust seasoning if necessary, adding more salt and pepper to taste.

                Serve hot, garnished with fresh chopped parsley.
