6 ounces of thick-cut bacon, chopped

1 pound of Irish sausages, cut into chunks

1 large onion, sliced

3 medium potatoes, peeled and sliced

3 large carrots, sliced

4 cups chicken broth

2 tablespoons apple cider vinegar

1 tablespoon brown sugar

2 teaspoons dried thyme

1 teaspoon black pepper

Salt to taste

Fresh parsley, chopped for garnish

In a skillet over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels.

    In the same skillet, lightly brown the sausage pieces for about 3-4 minutes. Remove and set aside.

      In the slow cooker, layer the sliced onions, followed by the potatoes, carrots, and browned sausages.

        Sprinkle the crispy bacon over the top of the layered vegetables and meats.

          In a bowl, whisk together the chicken broth, apple cider vinegar, brown sugar, thyme, and black pepper. Pour this mixture over the ingredients in the slow cooker.

            Add salt to taste and stir gently to incorporate without disturbing the layers too much.

              Cover the slow cooker and cook on low for 6-8 hours or on high for 4-5 hours, until the vegetables are tender and the flavors meld.
