2 lbs boneless, skinless chicken thighs

1 cup natural peanut butter

1 cup coconut milk

1/4 cup soy sauce or tamari

2 tablespoons honey

2 tablespoons lime juice

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground cumin

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup chicken broth

1 cup chopped green onions (for garnish)

Chopped peanuts (for garnish)

Fresh cilantro (for garnish)

Instructions
 

In a large bowl, mix together the peanut butter, coconut milk, soy sauce, honey, lime juice, minced garlic, grated ginger, cumin, and red pepper flakes until well blended.

    Place the chicken thighs in the slow cooker, and pour the peanut sauce mixture over the top, ensuring the chicken is well coated.

      Add the chicken broth to the slow cooker to ensure there's enough liquid for cooking.

        Cover the slow cooker with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
