4 boneless, skinless chicken breasts

1 cup sweet chili sauce

1/4 cup soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 green onions, sliced (for garnish)

Cooked jasmine rice (for serving)

Sesame seeds (for garnish)

Instructions
 

Begin by placing the chicken breasts at the bottom of the slow cooker.

    In a mixing bowl, combine the sweet chili sauce, soy sauce, rice vinegar, minced garlic, and grated ginger. Stir until well mixed.

      Pour the sweet chili sauce mixture over the chicken in the slow cooker, ensuring the chicken is coated evenly.

        Add the sliced red bell pepper and broccoli florets on top of the chicken.

          Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.

            About 30 minutes before serving, uncover the slow cooker and add the cornstarch slurry to the sauce. Stir gently to combine and thicken the sauce.

              Once the chicken is done, shred it with two forks right in the slow cooker, mixing it with the sauce and vegetables.

                Serve the sweet chili chicken over cooked jasmine rice, garnished with sliced green onions and a sprinkle of sesame seeds.
