2 lbs ground beef (or turkey for a lighter option)

1 large onion, diced

4 cloves garlic, minced

2 cans (14.5 oz each) diced tomatoes with green chilies

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

3 tablespoons chili powder

2 tablespoons ground cumin

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon salt

1 teaspoon black pepper

2 cups beef broth (or vegetable broth)

1 tablespoon olive oil

1 bell pepper (red or green), diced

Optional toppings: shredded cheese, sour cream, chopped green onions, and fresh cilantro

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add minced garlic and cook for an additional minute, stirring frequently to avoid burning.

      Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 6-8 minutes. Drain excess fat if necessary.

        Transfer the cooked beef, onion, and garlic mixture to the slow cooker.

          Add the diced tomatoes, kidney beans, black beans, bell pepper, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir everything together until well combined.

            Pour in the beef broth, ensuring all ingredients are covered.

              Cover the slow cooker with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.

                About 30 minutes before serving, taste the chili and adjust seasoning as necessary.

                  Serve hot, garnished with your choice of shredded cheese, sour cream, green onions, and fresh cilantro.
