4 smoked sausages, sliced (your choice: chicken, pork, or plant-based)

4 medium potatoes, thinly sliced (Yukon Gold or Russet)

1 medium onion, diced

3 cloves garlic, minced

1 cup cream or whole milk

1 cup shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.

      Add the sliced smoked sausages to the skillet and cook for another 5-7 minutes, until they are golden and slightly crispy. Stir in the smoked paprika and dried thyme. Remove from heat.

        In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom. Season with salt and pepper.

          Next, layer the sausage mixture over the potatoes evenly.

            Top with the remaining potato slices, adding another light seasoning of salt and pepper.

              Pour the cream or milk evenly over the entire dish, ensuring everything is covered.

                Sprinkle the shredded cheddar cheese generously on top.

                  Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

                    After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are fork-tender and the cheese is bubbly and golden.

                      Once baked, let it rest for about 10 minutes before serving. Drizzle with fresh parsley on top for a pop of color.
