Smoked Turkey Roulade

2 pounds of turkey breast, skinless and boneless

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup dried cranberries, chopped

Zest of 1 orange

2 tablespoons fresh rosemary, chopped

Salt and pepper to taste

1 cup turkey or chicken broth

1 tablespoon olive oil

1/4 cup honey

1 tablespoon Dijon mustard

Instructions
 

Preheat the smoker to 225°F (107°C). If you don't have a smoker, you can use an oven with a smoking tray or mimic the process on a grill.

    Place the turkey breast between two pieces of plastic wrap and use a meat mallet to pound it out to an even thickness, about 1/2 inch thick.

      In a mixing bowl, combine the chopped spinach, cream cheese, dried cranberries, orange zest, rosemary, salt, and pepper until well blended.

        Spread the spinach mixture evenly over the turkey breast, leaving about an inch of space at the edges.

          Starting from one end, tightly roll the turkey breast into a roulade, tucking in the ends as you go to secure the filling.

            Use kitchen twine to tie the roulade at intervals (usually about 2 inch intervals) to hold the shape and keep the filling inside.

              In a small saucepan over medium heat, combine the honey and Dijon mustard. Stir until well mixed, then set aside to cool slightly.

                Brush the roulade with olive oil, then coat it with the honey-Dijon mixture, ensuring it's well covered.

                  Place the roulade in the smoker and cook for approximately 2-3 hours or until the internal temperature reaches 165°F (74°C). Baste with additional honey glaze every 30 minutes for added flavor.

                    Once cooked, remove the roulade from the smoker and let it rest for at least 15 minutes before slicing.

                      While the roulade is resting, heat the turkey or chicken broth and add any remaining honey glaze mixture to it. Simmer until slightly thickened.

                        Slice the roulade into thick portions and drizzle with the broth mixture before serving.
