Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup graham cracker crumbs

1 cup chocolate chips (semi-sweet or milk chocolate)

1 cup mini marshmallows

Extra chocolate chunks for topping

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.

Beat in the eggs one at a time, followed by the vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs until evenly mixed.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Fold in the chocolate chips and mini marshmallows with a spatula, ensuring they are evenly distributed throughout the dough.

Using a tablespoon or cookie scoop, drop rounded portions of the cookie dough onto the prepared baking sheet, leaving space between each cookie as they will spread while baking.

Press a few extra chocolate chunks on top of each cookie for that irresistible appearance.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers might look slightly undercooked, but they will firm up as they cool.

Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
