12 mozzarella sticks

12 slices of bacon

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 tablespoon cayenne pepper

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil for frying

Optional: Sliced jalapeños for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

    Prepare the Bacon: In a skillet over medium heat, partially cook the bacon slices (about 4-5 minutes) until they are slightly crispy but not fully cooked. This will prevent the bacon from being too greasy on the finished product. Remove from heat and allow to cool slightly.

      Breading Station: Set up a breading station by placing the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.

        Season the Breadcrumbs: In the bowl of breadcrumbs, add cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well to ensure an even distribution of spices.

          Wrap the Mozzarella: Take each mozzarella stick and wrap it tightly with a slice of partially cooked bacon, securing the end with a toothpick if necessary.

            Dredge in Flour: Roll each bacon-wrapped mozzarella stick first in the flour, making sure it’s coated evenly. Shake off any excess flour.

              Dip in Eggs: Next, dip the floured mozzarella sticks into the beaten eggs, allowing any excess to drip off.

                Coat in Breadcrumbs: Finally, roll them in the spiced breadcrumb mixture until completely coated. Repeat until all mozzarella sticks are prepared.

                  Fry the Sticks: In a deep skillet or a frying pan, heat vegetable oil over medium-high heat (enough for about 1 inch of oil). Carefully place a few of the sticks into the hot oil, frying them for about 2-3 minutes on each side until golden brown and crispy. Remove and place on the lined baking sheet.

                    Bake to Finish: Once all mozzarella sticks are fried, bake them in the preheated oven for about 5-7 minutes to ensure the cheese inside is melted and gooey.

                      Serve: Once baked, allow them to cool for a minute. Serve hot with your favorite dipping sauce, such as spicy marinara or ranch, and garnish with sliced jalapeños if desired.
