Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into chunks

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon turmeric powder

1 teaspoon ground cumin

4 cups low-sodium chicken broth

2 cups water

2 medium carrots, sliced

1 cup celery, diced

1 cup green beans, trimmed and halved

1 cup kale or spinach, roughly chopped

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

    Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the chicken chunks to the pot, and cook until slightly browned on all sides, about 5-7 minutes.

        Sprinkle in the turmeric powder and ground cumin, stirring well to coat the chicken. Cook for another 1-2 minutes to bloom the spices.

          Pour in the chicken broth and water. Bring the mixture to a gentle simmer.

            Add the sliced carrots, diced celery, and green beans to the pot. Simmer for 15-20 minutes until the vegetables are tender.

              Stir in the chopped kale or spinach and cook for another 5 minutes until wilted.

                Season the soup with salt, pepper, and freshly squeezed lemon juice for added zest.

                  Remove from heat and let it cool slightly before serving.
