4 chicken thighs (bone-in, skin-on)

1 can (14 oz) coconut milk

2 tablespoons coconut oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, sliced

1-2 fresh red chilies, sliced (adjust for spice preference)

1 tablespoon ginger, grated

1 teaspoon ground cumin

1 teaspoon paprika

Salt and black pepper to taste

Juice of 1 lime

Fresh cilantro for garnish

Prepare the Chicken: Pat the chicken thighs dry and season with salt and pepper on both sides.
