Spicy Cauliflower Tacos

Indulge in these delicious Spicy Cauliflower Tacos that are perfect for a healthy twist on taco night! Made with roasted cauliflower seasoned to perfection and topped with fresh ingredients like cabbage, avocado, and cilantro, these tacos offer a burst of flavor in every bite. Ready in just 40 minutes, they’re easy to make and delightfully satisfying.

Ingredients
  

1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1/2 cup cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

1/4 cup queso fresco, crumbled (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, ground cumin, cayenne pepper, salt, and pepper. Toss until the cauliflower is well coated.

      Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and crispy on the edges, flipping halfway through to ensure even cooking.

        While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable and slightly charred.

          Once the cauliflower is done roasting, remove it from the oven and let it cool slightly.

            To assemble the tacos, layer some shredded red cabbage on each tortilla, followed by a generous portion of roasted cauliflower.

              Top with fresh cilantro, avocado slices, and crumbled queso fresco if using.

                Serve with lime wedges on the side for drizzling.
