Spicy Chipotle Breakfast

4 large eggs

1 cup black beans, rinsed and drained

1 ripe avocado, diced

1 medium tomato, diced

2 tablespoons chipotle sauce (adjust based on spice preference)

1 tablespoon olive oil

1/2 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

2 corn tortillas

1/4 cup queso fresco, crumbled (optional)

Instructions
 

Heat the olive oil in a skillet over medium heat. Add the black beans and sprinkle in the ground cumin, salt, and pepper. Sauté for about 3-4 minutes until warmed through.

    In a separate bowl, whisk the eggs with the chipotle sauce until well combined.

      Push the beans to one side of the skillet and pour the egg mixture into the empty side. Cook, stirring gently, until the eggs are set and soft, about 4-5 minutes.

        While the eggs are cooking, warm the corn tortillas in a dry skillet until flexible, about 1 minute per side.

          To assemble, place a tortilla on each plate, then spoon the spicy egg and bean mixture on top of the tortilla.

            Add the diced avocado and tomato on top and sprinkle with crumbled queso fresco if using.

              Garnish with freshly chopped cilantro for a pop of color and flavor.
