Instructions
Begin by soaking the rice noodles in hot water for about 10-15 minutes, or until they’re softened. Drain them and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant but not browned.
Toss in the sliced red bell pepper, snap peas, and julienned carrot, and stir-fry for about 3-5 minutes, until the vegetables are tender-crisp.
Add the softened rice noodles to the skillet, along with the soy sauce, chili paste, sesame oil, and sugar.
Gently toss everything together until the noodles are well coated in the sauce and heated through, about 2-3 minutes.
Scatter the spring onions on top and give it one last toss to combine.
Remove from heat and garnish with fresh cilantro and sesame seeds before serving.
Notes
Adjust the chili paste according to your spice preference.
