1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

½ lb sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust for spice level)

1 tablespoon soy sauce

1 avocado, sliced

1 green onion, finely chopped

1 tablespoon sesame seeds

Oil for frying (such as vegetable or canola)

Seaweed sheets (nori), for garnish

Microgreens or cilantro for garnish (optional)

Instructions
 

Prepare the Sushi Rice: Rinse sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil, cover, and reduce the heat to low. Cook for about 18-20 minutes until the rice is tender and water is absorbed.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl, drizzle the vinegar mixture over the rice, and gently fold it in with a spatula. Allow the rice to cool to room temperature.

      Prepare the Tuna Mixture: In another bowl, combine diced tuna, mayonnaise, sriracha, and soy sauce. Gently mix until the tuna is well coated. Adjust the heat by adding more sriracha if desired.

        Form the Rice Cakes: Once the rice has cooled, wet your hands and scoop the rice to form small rectangular or square cakes, about 2 inches wide and ½ inch thick. Repeat until all rice is shaped.

          Fry the Rice Cakes: Heat oil in a large skillet over medium heat. Carefully add the rice cakes in batches, frying for about 2-3 minutes on each side until golden and crispy. Remove and place them on a paper towel-lined plate to drain excess oil.
