Instructions
In a mixing bowl, combine the ground turkey, chopped spinach, crumbled feta cheese, chopped red onion, minced garlic, dried oregano, black pepper, and salt. Mix until well combined.
Divide the turkey mixture into four equal portions. Flatten each portion into a patty shape and create a small indent in the center of each patty.
Form a small ball of extra feta cheese and spinach (about 1 tablespoon) and place it in the center of each patty. Fold the edges over the filling, sealing it inside the patty. Make sure it is sealed tightly to prevent any filling from leaking out during cooking.
Preheat a skillet over medium heat and add olive oil.
Once the skillet is hot, place the stuffed turkey patties in the skillet. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F and the burgers are golden brown.
While the burgers are cooking, toast the whole grain burger buns until lightly golden.
Assemble the burgers by placing the cooked turkey patties on the toasted buns and topping them with sliced tomatoes, lettuce, and a drizzle of tzatziki sauce if desired.
