2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

Salt and freshly cracked black pepper to taste

4 large russet potatoes

1 tablespoon cornstarch

Oil for frying (canola or vegetable oil)

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh thyme leaves

Zest of 1 lemon

Prep the Potatoes: Peel and cut the russet potatoes into thick fries (about 1/2 inch wide). Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This will help achieve crispy fries.

    Make Garlic Herb Butter: In a bowl, combine the softened butter, minced garlic, chopped parsley, thyme, and lemon zest. Mix well until fully combined and set aside.

      Prepare for Frying: Drain the potato fries and pat them dry with a kitchen towel. Toss the fries with cornstarch evenly to help them crisp up while frying.

        Fry the Potatoes: In a deep pot or fryer, heat oil to 350°F (175°C). Carefully add the fries in batches, ensuring not to overcrowd the pot. Fry for about 5-6 minutes until they start to turn golden brown. Remove and drain on paper towels. Let them rest for a few minutes to crisp up.

          Cook the Steaks: Season the ribeye steaks liberally with salt and black pepper on both sides. In a heavy skillet (preferably cast iron), heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the steaks to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

            Rest the Steaks: Remove the steaks from the skillet and let them rest for 5 minutes on a cutting board.

              Finish the Fries: After the fries have rested, increase the oil temperature to 375°F (190°C) and fry them again for an additional 2-3 minutes until super crispy. Drain again on paper towels and season with salt immediately.
