2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Season the ribeye steaks generously with salt and pepper on both sides.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks to the skillet and sear for 4-5 minutes on each side for medium-rare, or longer for your desired doneness. Remove the steaks from the skillet and set aside to rest.

      In the same skillet, add the sliced onion and sauté for about 3-4 minutes until softened.

        Add the minced garlic and sauté for an additional minute until fragrant, ensuring it does not burn.

          Stir in the diced tomatoes (with their juices), tomato paste, oregano, basil, and red pepper flakes. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

            Return the steaks to the skillet, spooning the sauce over them. Simmer for an additional 3-4 minutes until the steaks are heated through.

              Remove from heat and let rest for a minute before slicing or serving whole.

                Serve the steaks topped with the spicy tomato sauce and garnish with fresh parsley and grated Parmesan cheese, if desired.
