1.5 lbs chicken thighs, boneless and skinless

1/4 cup gochujang (Korean chili paste)

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Prepare the Marinade: In a medium bowl, mix together the gochujang, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil until you have a smooth marinade.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and sear the chicken thighs for about 5-6 minutes on each side or until golden brown and cooked through. Internal temperature should reach 165°F (75°C).

        Add the Marinade: Pour the reserved marinade into the skillet and bring it to a gentle simmer. Let it cook for about 3-5 minutes until it thickens slightly and the chicken is well-coated.

          Serve: Remove from heat, then slice the chicken and drizzle with extra sauce from the skillet. Sprinkle sesame seeds and chopped green onions on top for garnish.

            Plate: Serve with steamed rice or noodles, and a side of your favorite vegetables for a complete meal.
