1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, finely chopped

1/2 cup mini chocolate chips

1/4 cup heavy cream

Pinch of salt

Extra strawberry slices and chocolate shavings for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well-coated.

      Press the mixture evenly into the bottom of a square 8x8 inch baking dish. Bake for 8-10 minutes, until lightly golden. Remove from the oven and let it cool completely.

        In another bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and continue mixing until well blended.

          Stir in the vanilla extract and a pinch of salt. Gently fold in the finely chopped strawberries and mini chocolate chips to the cream cheese mixture.

            Spread the cream cheese mixture over the cooled graham cracker crust, smoothing it out evenly.

              Using a whisk, whip the heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.

                Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until firm.

                  Once chilled, cut the cheesecake into bite-sized squares or shapes using a sharp knife.

                    To serve, place the cheesecake bites on a platter and garnish with fresh strawberry slices and chocolate shavings on top.
