1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, diced

1/2 cup whipped cream (store-bought or homemade)

Extra crushed graham crackers or crushed cereal (for crunch topping)

Instructions
 

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture into the bottom of an 8-inch square baking dish to create a crust layer, ensuring it’s even and compact.

    In a separate mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and creamy.

      Gently fold in the diced fresh strawberries and whipped cream into the cream cheese mixture until everything is well combined and the strawberries are evenly distributed.

        Spread the cheesecake mixture evenly over the prepared crust in the baking dish. Smooth the top with a spatula.

          Place the baking dish in the refrigerator and let it chill for at least 2 hours (or until set).

            Once set, lift the cheesecake out of the dish using parchment paper (if used) and cut into small bite-sized squares.

              For added crunch, sprinkle extra crushed graham crackers or crushed cereal on top before serving.

                Arrange the bites on a serving platter and garnish with fresh strawberry slices if desired.
