Strawberry Cheesecake Pancakes

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

Whipped cream for topping

Additional strawberries for garnish if desired

Instructions
 

In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, mix the buttermilk, egg, and melted butter until smooth.

      Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; it's okay if there are a few lumps.

        Preheat a griddle or non-stick pan over medium heat and lightly grease it with cooking spray or a little melted butter.

          In a small bowl, beat the softened cream cheese with powdered sugar and vanilla extract until creamy and smooth. Set aside.

            Pour 1/4 cup of pancake batter onto the hot griddle for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then spread a teaspoon of the cream cheese mixture on top of the pancake.

              Add a few strawberry slices on top of the cream cheese mixture, then pour another 1/4 cup of pancake batter over it, covering the berries and filling.

                Flip the pancake carefully and cook for another 2-3 minutes until golden brown and cooked through.

                  Repeat the process with the remaining batter and cream cheese filling.

                    To serve, stack the pancakes on a plate and add a dollop of whipped cream and more fresh strawberries on top.
