2 cups fresh strawberries, hulled and sliced

1 cup heavy cream

8 oz mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup strong brewed coffee, cooled

2 tablespoons honey (optional)

24 ladyfinger cookies

Cocoa powder, for dusting

Fresh mint leaves, for garnish

Instructions
 

Prepare the Strawberries: In a bowl, combine the sliced strawberries with honey (if using) and let sit for about 10-15 minutes to release their juices. This creates a simple strawberry syrup.

    Whip the Cream: In a mixing bowl, whip the heavy cream until soft peaks form.

      Combine Cheese and Sugar: In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.

        Fold Together: Gently fold the whipped cream into the mascarpone mixture until well combined. Be careful not to deflate the cream.

          Dip Ladyfingers: Quickly dip each ladyfinger into the cooled coffee, ensuring not to soak them, before placing them in a single layer at the bottom of a 9x9 inch baking dish.

            Layering: Spread half of the mascarpone mixture over the ladyfingers, followed by half of the prepared strawberries. Repeat this process with another layer of dipped ladyfingers, the remaining mascarpone mixture, and the rest of the strawberries on top.

              Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.

                Serve: Before serving, dust the top with cocoa powder and garnish with fresh mint leaves for a pop of color.
