1 cup jasmine rice

2 cups chicken broth

2 chicken breasts, diced

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup corn kernels (fresh or frozen)

1/2 cup cherry tomatoes, halved

1 avocado, sliced

1/4 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1 lime, juiced

1/4 cup cotija cheese (or feta as a substitute)

2 tablespoons olive oil

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low and simmer, covered, for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

    Season and Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season diced chicken breasts with smoked paprika, garlic powder, salt, and pepper. Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Remove from heat.

      Sauté the Corn: In the same skillet, add the corn kernels and cook for about 3-4 minutes, until heated through and slightly charred. Mix in the halved cherry tomatoes and cook for an additional minute until just warmed.

        Assemble the Bowl: To assemble, place a serving of fluffy jasmine rice in the bottom of each bowl. Top with the sautéed corn and tomato mixture, followed by the cooked chicken.

          Add Toppings: Layer on sliced avocado, chopped red onion, and fresh cilantro. Drizzle lime juice over the top and sprinkle with cotija cheese.
