1.5 lbs flank steak

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped

1/2 cup feta cheese, crumbled

1/4 cup pine nuts, toasted

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh black pepper

1 tablespoon olive oil

Salt to taste

Kitchen twine or toothpicks for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    Lay the flank steak flat on a cutting board. Using a sharp knife, carefully slice it open lengthwise to create a pocket, being cautious not to cut all the way through.

      In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

        Add the chopped spinach and sun-dried tomatoes to the skillet. Cook until the spinach wilts, about 2-3 minutes.

          Remove the skillet from heat and stir in the feta cheese, toasted pine nuts, dried oregano, black pepper, and salt to taste. This will be your stuffing mixture.

            Stuff the mixture into the opened flank steak pocket, spreading it evenly.

              Carefully close the steak pocket and secure it with kitchen twine or toothpicks, making sure the filling stays inside.

                Season the outside of the flank steak with salt and pepper.

                  Place the stuffed flank steak in a baking dish and bake in the preheated oven for 25-30 minutes or until the steak reaches your desired level of doneness (135°F for medium-rare).

                    Remove from the oven and let it rest for 5-10 minutes before slicing.

                      Slice the stuffed flank steak into thick pieces, allowing the stuffing to be visible.
