1 teaspoon lemon juice

1 to 2 tablespoons sugar-free sweetener (like erythritol or stevia)

1 cup sparkling water

1/2 cup heavy cream or coconut cream (for a dairy-free option)

Ice cubes

Fresh mint leaves for garnish (optional)

Instructions
 

In a small saucepan, combine the fresh blueberries and lemon juice. Cook over medium heat for about 5 minutes, stirring occasionally until the blueberries start to burst and release their juices.

    Add the sugar-free sweetener to the saucepan, stirring until fully dissolved. Remove from heat, and let it cool to room temperature.

      Once the blueberry mixture is cool, strain it through a fine mesh sieve into a bowl or jug, pressing down to extract as much liquid as possible. Discard the solids.

        In a glass, add ice cubes, then pour in about 1/4 cup of the blueberry syrup you just made.

          Slowly top it with sparkling water, allowing the bubbles to enhance the mixture.

            Finally, add in the heavy cream or coconut cream, gently stirring to create a marbled effect.
