Ingredients
  

1 cup sun-dried tomatoes (oil-packed, drained)

1/2 cup fresh basil leaves

1/4 cup pine nuts (toasted)

1/4 cup grated Parmesan cheese

1 garlic clove, minced

1/4 cup extra virgin olive oil

Salt and pepper to taste

Zest of 1 lemon

Juice of 1/2 lemon

Just a pinch of red pepper flakes (optional for a spicy kick)

Instructions
 

Begin by draining the sun-dried tomatoes and roughly chopping them if they are whole.

    In a food processor, combine the chopped sun-dried tomatoes, fresh basil leaves, toasted pine nuts, grated Parmesan cheese, and minced garlic.

      Pulse the mixture a few times until coarsely blended but not completely smooth.

        With the food processor running, slowly drizzle in the extra virgin olive oil until the mixture reaches your desired consistency—smooth yet slightly chunky is ideal.

          Season the pesto with salt, pepper, lemon zest, lemon juice, and red pepper flakes (if using). Pulse again to combine all the flavors.

            Taste and adjust seasoning if needed; add more lemon juice for brightness or extra cheese for richness.

              Transfer your Sun-Dried Tomato Pesto into an airtight container. It can be used immediately or refrigerated for up to a week.
