Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 cup sour cream

1 teaspoon vanilla extract

1 cup chopped pecans, toasted

1/2 cup maple syrup (optional, for extra sweetness)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.

In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

Add the eggs, one at a time, mixing well after each addition.

Stir in the sour cream and vanilla extract, blending until smooth.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

Gently fold in the chopped toasted pecans, reserving a handful for topping if desired.

If using, fold in the maple syrup for an added sweetness kick.

Pour the batter into the prepared loaf pan and smooth out the top. Sprinkle the reserved pecans on top for added crunch.

Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Prep Time: 15 mins | Total Time: 1 hr 15 mins | Servings: 10 slices
